Yummy Brinjal thokku


Brinjal thokku

ingredients:

Onion-1
Tomato-3
medium size onion -1
karam masal
chilly powder
sombu
Methi seeds thats venthayam
asafoetida(perungaayam)
oil
salt
Brinjal-1 cup
ginger garlic paste-1-2 spoon

Masala 1:
red chilly-3
Coriander seeds-1 spoon
Bengal gram -1 spoon
Mustard-few
Oil-
Coconut-1 tablespoon
(Fry it in little oil then allow it to cool and powder in mixie.)


Procedure:

Chop the brinjal lightly wash it and filter water and chopped into small pieces.

Take a small vessel put the chopped brinjal and add pinch of salt and mix it with brinjal by your hands and keep it aside.

Chop the onions and tomato finely.

Now take a kadai add oil as its thokku add two tablespoon oil extra

Add mustard,sombu,methi seeds, cury leaves,ginger galric paste,asafoetida and chopped onion.

Fry it well when it smells well add chopped tomato,pinch of salt,turmeric powder,chilly powder,thaniya powder and karam masal

when it becomes thokku form add the brinjal in this stage with water and masala 1 and wait till the brinjal cooks fully

Add little oil as its thokku oil is must as we then add salt if needed means

Then add coriander leaves if you want lighly add lime juice or vinegar for different taste.

Then your yummy yummy brinjaal thokku ready to taste

It suits for steamed rice,chapathi,pooti,dosa,idly and all items,pulav,biryaani

brinjal have fat soluble value it reduce fat

Redchilly Ginger Ladiesfinger(Okra) Buttermilk kulambu





Ingredients:

  • Ladies fingers(Okra) -10 sticks atleast
  • Salt
  • oil,ghee or coconut oil
  • Coriander,Curry leaves
  • Turmeric powder


For grinding:

  • Red dry chilly-2
  • Ginger a small piece
  • Pepper -5 to 8 small balls
  • Fresh raw rice uncooked-1 tea spoon
  • Coconut few pieces
  • Coriander seed
  • Cumin seed a teaspoon

For seasoning:

  • Mustard
  • Urad dhal
  • Channa dhal
  • Cashew nut(broken)
  • Roasted Onion 3 teaspoon
  • Chopped ginger few pieces


Procedure:

Take a pan add oil and fry coconut,pepper,ginger ,coriander seed,red chilly and  raw rice.

Fry it for a while and allow it to cool.Then grind well.

In this mean time mix water in curd and stirrer well with a spoon or with beater in a seperate vessel.So butter milk will be ready

Now add the Grinded paste,turmeric powder and salt in this butter milk.

Take a kadaai and add oil,mustard,curry leaves.

Fry the chopped Ladies finger with a pinch of salt to it an close the lid.

When it becomes golden brown and cooked well. Pour the buttermilk mixture and chilly powder to it and add salt as u need amount.

When it started to bubble very lightly or just boil for 1 minutes and switch off the stove

Finally add coriander leaves,curry leaves to it.Then serve it hot

Take a small kadaai  add little ghee or coconut oil for a flavor and add the seasoning items one by one
,Mustard,Urad dhal,Channa dhal,Cashew nut(broken),Chopped ginger few pieces and except roasted onion fry everything 

Fry lightly everything then add the roasted items ,roasted onions on the Red chilly ginger buttermilk kulmabu

Note:In this recipe you can use fried Brinjal or cooked chickpea nut instead of ladies finger

Potato Fry or Valkaai fry or dhaal vadai will be a best companion for this

Pepper Boiled Egg



Ingredients:

Boiled egg-4

Onion-1

Pepper powder

Cumin seed powder

Salt

Oil


Procedure:

First boil the eggs cook well and remove the outer shell and keep aside

Slice the each egg as a two piece and keep aside.

Now take pepper powder cumin seed powder and salt.mix everything together

Now spread this mixture on the sliced egg as a toppingsand mix well.

In this meantime take the pan and add oil.

Now add the Onion and fry it well .

when the onion changes golden brown now add the sliced egg

Please note you have to keep the #ee0fa0 side of egg one by one instead of white side of egg.

That yellow side immersed in oil and white side have to be on top.

The pepper wil start to mix in oil from the egg.wait for a while without disturbing.

Add all the sliced eggs together.

Then after 2-3 minutes lightly stirrer it and you wil get a flavor smell.

Off the stove and serve the pepper boiled  spicy egg which is yummy yummy


Rava Puttu with mashed banana



Ingredients:

  • [2 cups] Rava or Samolina
  • [ 1/2 teaspoon] salt
  • [1 cup] coconut grated
  • [1/2 cup] sugar
  • Banana
  • Cardamon

Procedure:

Roast dry Rava in a pan.  Add salt.

Allow it to cool and keep aside.

Fill the water in puttu jar and let it boil Or Use idly vessel for puttu

Mix the grated coconut and sugar and cardamon keep it aside.

Take some water and sprinkle over rava occationally and rub so that it becomes like bread crumb.

It would take some time.  Every time you need to sprinkle only one tbl. spoon of water and rub it.

Otherwise it would have big lumps.

When it looks like bread crumb stop the process.

Now take the puttu mold and add coconut mixture then Rava which looks like bread crumbs, until

you finish the whole mold.

Close the lid and put over puttu jar.Cook 2-3 minutes after you see steam coming from the upper lid holes.

Remove from heat. Unmold it pushing it from back side.

If you wont have mold then keep in idly vessel and wait for 3 minutes

Eat with banana mashed and a tsp. of sugar.

Crispy Rava Dosa



Ingredients:

Rava -2cups
Maida-1/2 cup
Rice flour-1/2cup
Cumin seeds(Jeera)
Green chilly-1 or 2 finely chopped
Coriander leaves-2 Tblspoon
Curry Leaves for your optional
Salt to taste
Water- 6Cups(approx)
Oil as required
Big Onion-1

Procedure:

Take a vessel.Add Rava,Maida and Rice flour

Then add cumin seeds,chopped ginger,chopped Onion and coriander leaves.

Then you can add your other variety like carrot or coconut or anyother.

Add salt and pepper  and add six cups of water in the same cup that you used for Rava cup.

Keep it in fridge or outside for 30mins to 1hour.

Then after 1hour.Take the dosa Pan and keep the pan High.

Add water if u want means in that Rava dosa mix and stirrer well.

When the pan is hot Pour the Rava dosa first by outside then pour inside like this and add oil.




Then crispy Rava dosa wil be ready.we can eat directly or we can have any spicy chutnies as side dish

Above said are the main ingredients and we can add the following for different flavors 

Some varieties which is optional 

Finely grated Ginger (or)

Grated carrot (or)

Grated Beetroot (or)

Grated coconut (or) 

Any other Flavors for your innovative idea

Maida Pepper Murukku

Ingredients:

Maida-1 cup
Rava - Little amount or half cup which is for crispyness
Rice Flour-1/2 cup
Ghee
salt
Pepper
Asaefotida
Cumin powder
Cumin seeds
Oil

Procedure:

Fry  Rava,rice flour and maida on a kadai without adding oil or water.Keep it aside.

Now Take a vessel add these fried items and add pepper and cumin seeds.

Add salt and ghee and add little bit of water.Create like a ball.Dnt add more water.


Capsicum Egg Omlet


Capsicum Egg Omlet


Ingredients:

  • Capsicum -1 cup (you can add the three color bell peppers red,green,yellow)
  • Oil
  • Egg-2
  • Onion-1 cup
  • Tomato-1/2(optional)
  • Green chilly chopped 2 teaspoon
  • Salt


Procedure:

Break the egg and pour it in a mixing bowl then add salt and pepper little bit into the egg.

Beat well for 30 seconds so it will create foamy bubbles.keep it aside

Now Switch on the Dosa pan or small kadaai.Add oil and spread the oil on all sides by take the pan on hand and make the oil move on all sides by circling it by hands

Keep on the stove again add the chopped onion keep the stove flame medium.

when it becomes golden brown keep low flame add finely chopped tomato.

Fry it well and add pinch if salt and add chopped capsicum 2 -3 teaspoon(for one omlette each)

Your capsicum dont need to be cooked just a mild sauting is enough.so after 20 seconds take it.

Add the fried mixture on the beaten egg and beat well.

Add oil on dosa pan spread well and pour the beaten Egg

Then turn the omlet and when its cooked.Serve it hot

Good Flavored capsicum omlet is ready.

Note : Capsicum have to be chopped into small size if you are giving to kids.adults can have this in any size not an issue.Kids wont chew properly so size of veggies always have to be in small size

Coconut Veg Fried Rice




Ingredients:

Coconut- 2 to 3 big slice

Dried Red chilly -4

Channa Dhal- few

Coconut oil and Gingely oil

Capsicum,Beans,carrot,Beans chopped

Soya sauce

Salt

Big Onion - 1

Black pepper powder or white pepper powder

Cooked white rice


Procedure:

Grind the coconut wihtout adding water in dry condition

not so powder and not so hard.Grind like a coconut flower.

Keep it aside.Take a pan add Gingely oil  and little bit coconut oil for flavor

When its warm put Dried Red chilly when it fully fried thats its

chilly flovor was absorbed in oil.

Now add channa dhal fry little bit add onion fry well

Then add Capciscumm fry for a while then add the vegetables

that you have.

Fry well and add soya sauce 2-4 drops for flavor which smells great.

Then add pinch of salt and add pepper.Fry it well when all got mixed.

Then add the Cooked rice into it add salt and pepper to ur taste and mix well

Hence tasty Coconut fried Rice is ready to serve

Bread Omlet









Ingredients:

Bread-2
Medium size Onion-1
Tomato-1
chilly powder
Salt
Pepper

Procedure:


Chop the onion and tomato finely

Take a Dosa pan add oil

Now add onion fry it well and add then add tomato

When its half cooked add chilly powder and fry it well.

In this mean time break egg and add in a small vessel

Add salt and stirer well

Now when the fry ready add the hot fry in this beaten egg.

Take a piece of bread keep it aside

Mix the fry well on beaten egg.

Heat the pan add oil.

Now pour the egg on pan and spread well

Now press the bread in center of the omlet.

when omlet ends are half-cooked cover the bread by egg on four sides like a envelope cover

Then turn the bread olmet and put in pan and press on pan.

when its cooked take it

So its ready to serve

Capcicumm Lemon Rice



 Capcicumm Lemon Rice




Ingredients:

Oil

Lemon-1 or 2

Channa Dhal- few

mustard few

Onion-1 medium size

dried Red chilly- 3 to 5

Salt to taste

Cooked rice


Chopped Corainder leaves few


Capsicumm-1 or 1(1/2)cup


Procedure:


Take a pan and Add oil put mustard,chopped Dried red chilly when it burst out add the dried channa dhal.

Now add the onion and fry it till it change to mild color.

In this stage add Chopped capscicumm.Fry lightly and add turmeric powder 


In this means time take lemon juice , add salt in it and keep it aside.


When the capsicum semi cooked take the onion and capsicum alone and keep it aside then


keep the half lemon juice aside.

Now Add half amount of lemon juice and in the same kadaai.When lemon rice mix  got ready


Off the Stove and mix the cooked rice in capcicumm mixture and lemon juice with required salt

Note:if you add half lemon juice after capscium half cooked means the capsicum also have the lemon taste.If you dont like means.Add the lemon juice lastly during mixing the rice
Mix well and add salt if needed means

Bread Veggie Egg Masal

Ingredients:


Oil
Capcicum-half
Beans-3-4
Carrot-1-2
Bread-6pieces
Onion-  1 medim Size
Soya sauce-3drops
Karam masal
chilly powder
salt to taste
Tomato-1
Egg -2 or3
Green chilly-2 finely chopped
corainder leaves half cup

Procedure:


Take the pan add oil.

Then add the green chilly.Fry it for a while.

Add finely chopped capscicum.Fry it which gives a flavor

Add chopped onion in this stage wait til it come for golden color

Now add the chopped vegetables one by one.

Fry it well in this stage add few drops of soya sauce.

Add corainder leaves now

Fry it for a while add salt,karam masal and chilly powder

Pleas cut the bread into smal pieces

Now when the veggie masal ready add the bread peices.Dnt mix it in this stage add Two 
fresh eggs

Now start to mix u can add little salt for egg and add pepper if want spicy means

Then mix well off the stove

When u serve add ur decoarives here and sprinkle micher here thats snacks on top

Note:In this flavor u can add seperate fried egg instead of the latter adding egg stage

Rava Capsicumm Upma




Ingredients:

Rava 1 cup
Capcicumm finedly chopped
Soya sauce
Salt
Onion medium size -1
Green chilly-3
Oil
 Pepper powder
corainder leaves

Preparation:

Take pan add oil then put mustard as usual.

Now add chilly after the mustard blast.

When chilly flavor smell got up add onion in this stage.

Then add finely chopped capciccum.

Pinch of salt,pinch of pepper powder and pinch of soya sauce for flavor.

Then  fry it well and the smell changes as good flavor.

Add corainder leaves for flavor taste

Wait for a while then add water little bit and salt to the taste.

Then add rava little by little as upma procedure.

Then stirer well as usual when it becomes thick

Then Upma wil be ready which tastes good and differnt.

(My hubby wont like upma hence i tried this
new variety now he is asking upma always)

Simple Pepper Wheat Murukku







Ingredients:

Wheat Flour-1 Cup
Rice flour-1/2 Cup
Oil+Ghee or soft melted butter alone
Salt to taste
Pepper Powder for ur taste
asafotida

Preparation:

Take a small vessel.Pour little amount of water.
Add little amount of oil,salt and little amount of pepper  and asafotida.
Add wheat flour in it mix well and add water little by little.
when it becomes semi solid it may sticky like.
Add rice flour little by little then and there add ghee or butter
Add little amount of pepper for ur taste.
Make it as soft mixture.

Now its ready henc put in murukku equipment.
start to design ur choice.
Fry in Oil.
Then crispy wheat pepper murukku wil be ready.
Next lightly fry again then only it wil be fully crispy.
Store in pet jar.

Emergency Tasty Kuruma



ingredients:

Spices as usual sombu and others
Sombu

Oil (ghee little bit its optional)

Very Small Onions-30 or two medium size onion

Tomato-1

Corainder leaves-1/2cup

Karam masala-1-2teaspoon

Cooked Vegetables for ur option eg:carrot,beans,green peas,potato etc

Green chilly-3

Salt and chilly powder for ur taste


Procedure:

Take pan add little bit oil.Just cut the onions into 4 half each or just put the skin removed onions on the pan

Then cut the tomato into 4 halves and add in pan.Fry for a while when it all got fried then allow it to cool

In this mean time cook the vegetables in cooker

Then grind the fried onion and tomato together in mixie.Dnt add water just grind well as paste.

Then take the same pan just add little bit oil and ghee.Then add the spices mainly sombu fry it.Add green chillies when the flavor got chilly smell

Add Little chopped onion for your option.Then just add the grinded paste and cooked vegetables

Then add Karama masala,chilly powder and turmeric powder little bit.Mix it well without adding water.

Then after 2mins add just pinch of sugar and salt to ur taste.Finally add corainder leaves which is chopped finally.

In this stage add water ,salt,chilly powder according to water level.Wait for 15mins and then serve it with hot.

Then super kuruma wil be ready for the tongue to taste.

Sweet Chicken Gravy


Sweet Chicken Gravy




Ingredients:

Biryani Spices
sugar-[1-2 tea spoon]
Tomato sauce [2 teaspoon]
Onion-[1 medium size]
Tomato-1
Corainder leaves -[1 /2 cup]
Chicken masala -[1 to 2 teaspoon]
Ginger-galic paste- [2tea spoon]
chilly powder [1/2 teaspoon]

Salt to ur taste


Preparation:

Fry the soft chicken 65 marinated pieces which is half or quater cooked.

Prepare chicken 65 half cooked which have to be very soft and tender and keep it aside

Take a kadai and add Oil.

Add biryaani spices when it smells great add corainder leaves

Then add chopped onions and wait till it change into golden color

Now add Ginger garlic paste fry well till the raw smell vanish then add chopped tomato.Allow them to fry well as a fine paste


Now in this stage add the chiken 65 or plainly roasted chicken

Mix them well and add chicken  masalaWait for a while now add salt and sugar.


If u want spicy means add little bit more chilly powder.Add little amount of water.when it cooked well and masalas got mixed well and getting thick off the stove

Spread corainder leaves as garnishing.

Dry Pepper Potato Fry



Dry Pepper Potato Fry:

Ingredients:

  • Finely chopped potato (which should be cut into very very small size)
  • Coconut oil-1 teaspoon
  • Gingely oil-2 teasponn
  • Pepper for your taste
  • Salt to taste

Procedure:
--------------

Dnt remove the skin of potato.Just cut the potato along with skin into small pieces
Then wash in water and filter the water

Keep the stove flame in low.

Now take the kadai.Add coconut oil and gingely oil

Add the spices if u want means

Then add mustard little bit and,garlic(in this stage u may see bubbles like flavor its due to coconut oil)

Finally add the chopped potato
add pinch of salt first and close the lid

Wait for sometime and stirrer well then and there.

when it got crispy squares add salt and pepper for ur taste.

Add pepper more which gives a good taste and flavor.

Add oil if the recipe was dry during cooking

It tastes good than the chilly powder potato fry.

Finally add chopped corainder leaves which gives a pleasant taste and smell good.

its so easy to prepare.

Try this recipe you can directly mix with rice and eat which tastes good

Simple Roti Roll with milkmaid:(Snacks)



Simple Roti Roll with milkmaid:(Snacks)

Ingredients what you will need:
  1. Milkmaid -2 teaspoon
  2. Spicy Micher(snacks), 
  3. Roti 


Just Apply the milkmaid on one side of roti and spread the spicy micher above this and roll it.Slightly warm if u want means.

Then it wil be a very tasty snacks in evening time

We can add differnt snack flavors or vegetables along with milkmaid coating as per our imagination and wish.So easy to prepare.

Milk Halwa:



Milk Halwa:
Ingredients:
2 litre of milk,
Ghee,
Cashew nut,
Dried grapes,
Almond




Boil the milk still when it becomes semi solid and the smell may changes pleasant.
It may take 30-45 minutes.Main thing is keep in low or medium flame.Using non stick kadai that is best.if u use normal steel or iron kadai stirrer more times dnt forget.

Then it becomes some what semi solid that is the amount of milk wil reduce henc at this stage add 1-2 cups of sugar as per us wish.then stirer well.Just wait for 10minutes stil it becomes little messy.

In this mean time fry cashew,almond,dried grapes lightly in ghee.Then add this in the milk halwa.so easy to prepare.

if it becomes hard means add lightly add milk and ghee becos sometime we miss the correct stage of halwa.

I hope this wil be fine and easy.

Salsa:(Side dish for Roti or Dosa even bread)

Ingredients:

1 or two Onion medium size,

Green chilly-2,

Tomato 1 or two,

Coriander leaves,

salt for ur need


Preparation:

  • Chop everything in small or mediums size.
  • Mix it well.Lightly mash dnt mash fully.
  • If u want spicy means u can add green chillies
  • Slightly spray peppr thats pinch enough


Note:

If no current means we can prepare this side dish salsa for tiffon items. You can add carrot or cooked vegetables in it.its ur wish and innnovations
